I am so grateful to have had a summer with my kids both attending a few camps, while also having some downtime and summer fun with myself and friends in the neighborhood. So, when it was time for school to start back up I was even more thrilled to be sending them back to learn, grow, and see school friends that have been travelling much of the summer.  

I don't know about you, but I often feel overwhelmed when I see other creators' feeds and blogs because I want to make all these delicious and heart-healthy snacks for my kids, but where oh where is the time? II juggle a small business, 2 kids, a husband, 2 dogs, and a myriad of other responsibilites. I also came to realize that for me, maybe just focusing on one or two for the week could be enough. I wish I had enough time to take 3-4 solid hours (not including shopping list and shopping itself!) and prep all of the meals for the week, the snacks for the fridge, and the dinners for the family, but truthfully that time is really hard to come by.  Time is an undisciplined bandit in my head and while I am constantly trying to wrangle him, I also give myself the grace to see what I can actually do versus what the world shows us is "possible" (thanks Instagram).

So, I'd like to start regularly blogging again, or maybe for the first time ;) and posting some of the ideas I have come up with using my organic, gluten free granola. My kids can either take these to school or have at pick up as they're off to their afterschool activities. 

This week, I worked on energy bites.  My son loves the cinnamon raisin version with almond butter, maple syrup, and of course, raisins. I added in 1 cup of Cashew Almond Apricot granola as well.  When they were rolled, I melted about 3/4 C of bittersweet chocolate (I love Guittard) and rolled them in the bowl. I set them on a sheet tray sprinkled the rest of the Cashew Almond Apricot over them and threw them in the fridge to solidify and cool down.  They were delicious, and both kid and adult approved!
